There are a lot of things I love about May. As a father, it brings a new cycle of things to do with my children, like enjoying the warmer weather and everything that comes with it... swinging in the hammock, walking, thunderstorms, observing the return of color and life in the form of trees leafing out, blooming flowers, and watching the cycle of birds from building a nest to seeing the fledglings leave the nest.
May also signals a wonderful time to celebrate moms, which likely have been inspirational, influential, and supportive in every way. I thought it would be fun to share a breakfast recipe/idea that my kids absolutely love, s'mores pancakes.
I enjoy cooking/baking, so I have searched high and low for a recipe that's easy, but also one that tastes good. This is the best pancake recipe that I have found,

Now for the fun part! I like to cook them on medium-low. I found that lightly cooking the pancakes on one side and flipping them before adding marshmallows and chocolate chips works best. For best results, use Jet Puffed Stacker Marshmallows, they are flat and spread evenly.
Combine the two pancakes by flipping the chocolate chip pancake onto the marshmallow one. Lightly press to spread the marshmallow. Unlike Buddy from the movie Elf, my kids like them without syrup.
